Roasted Red Pepper Vinaigrette
I love the freshness and taste of this summer's vinaigrette...such a perfect blend of flavors...It is SO simple to make...You broil the slices of fresh red pepper with a touch of olive oil until slightly browned..this brings out the amazing rich flavor of the pepper.. When roasted pepper slices cool.. place them in a blender and blend until smooth...Add the other ingredients...and...prepare your taste buds for a perfect blend of flavors...the soft mellow olive oil...the tang of the vinegar..the zip of fresh garlic.. the subtle sweetness of the fresh raspberries..and of course the amazing rich flavor of the roasted red pepper!
Enjoy this with any salad greens... flavorful and so very nutritious!
Time to prepare: Perhaps 5 minutes...after roasting the red peppers.
Ingredients:
1 large fresh red pepper
a handful of fresh raspberries
1/3 cup virgin olive oil
1/4 cup water
3 tbsps balsamic or other vinegar
1 clove garlic chopped
1/4 tsp sea salt
1/8 tsp cayenne pepper
1/8 tsp paprika
Blend the red pepper until smooth..add the clove of garlic..blend just a touch...add the wet and dry ingredients....blend till smooth..
Refrigerate
Makes 1 1/4 cup of vinaigrette
